Assets and Threat Assessment

Chili’s critical assets and potential undesirable events include the following:

- People -- Death, injury, assault, medical emergency, accidents
- Equipment -- Computer/Micro malfunction, kitchen system malfunction/failure, damage, theft, security system malfunction, sprinkler systems malfunction
- Activities -- Disruption to daily operations/ disruption of communication: servers and kitchen staff
- Information -- Customer (credit card) information stolen, business/employee information mishandled, damaged or lost
- Facilities -- Natural or man-made damage to building: theft, arson/fire, vandalism

Threat Assessment:

Some of the biggest man-made threats and Impact Levels that Chili’s faces are:
Food Contamination (High), Disgruntled Employee or Customer (Medium), Bomb Threats and Shootings (Medium), Fire and Power Outages (Medium)

Some natural disasters that can directly impact the restaurant are:
- Tornados have a potential of having a High Impact on the Restaurant because of their small warning time, and potential of severe damage and effect on human life and property damage.
- Thunderstorms are predictable and their severity is unspecified; Thunderstorms have potential for severe flooding which in turn could cause critical property damage such as equipment and the facility, including important data stored in the restaurant’s technical equipment.

March 26th, 2004 -- Fire Disaster at VCU Ramz Hall

The fire that broke out on March 26, 2004 destroying what was going to be Ramz Hall, a Residential Area for VCU students, is an unfortunate example of how devastating a disaster such as fire could be if it would occur at Chili’s Grill and Bar restaurant’s location. As mentioned in the blogs below, Chili's is located in the lobby area of the Cary and Belvidere Residential College; a fire, half the magnitude of the one in 2004, could be a critical life threating diaster.

-- The fire on March 26th, 2004 damaged almost 30 other separate buildings, estimating the total damage at 20 million: disrupting lives and many business operations around the area. Fortunately, no one was injured directly by the fire.

FOOD SECURITY PREVENTIVE MEASURES GUIDANCE FOR
FOOD ESTABLISHMENT OPERATIONS
(click on title for more information)
Food Security-protecting food against deliberate contamination- has become a very real concern for public health and law enforcement officials. The rise of terrorist activity in the U.S. and the availability of information over the Internet on how dangerous agents can be spread by air; water or food fuels this concern. As plans are developed to respond to outbreaks of food borne illness, thought must be given to how to cope with the threats of terrorism. This guide was modified and adapted by the Retail Food Security Committee of the North Carolina’s Department of Environment and Natural Resources. These are appropriate measures that can be taken by food service operations to minimize the risk of food being subjected by tampering or terrorist actions

Chili's Grill and Bar Restaurant

Background Information:

Chilli's Grill and Bar is:
•The first full-service restaurant on the VCU Campus
•Located in the lobby area of the Cary and Belvidere Residential College
•Located in the immediate vicinity of the Business and Engineering Buildings also, situated in close proximity to Downtown Richmond, Belle Isle, and many other historic and recreational areas;

Why Chilli's Grill and Bar as my Risk Management organization:
-- In case of terrorist attacks or natural/man made disasters, Chilli's Grill and Bar restaurant is a vulnerable target because of its location to critical campus infrastructures and main roads such as Broad St and Belvediere St that also lead to main highway entrances like 195, 95 and 64.
-- In case of a disaster at Chilli's Grill and Bar, there is potential for great human life and asset loss
